I'm sure the technique is already in use, but, it's two hours at 150 to 175 hanging, to really dry them out and pull most fat from them. Then it's 2 to 3 hours at 210 to 250 to really finish them. You can eat them at that point, or, what I've been doing is wrapping each in foil and spraying some apple cider on, then letting them bake for one more hour.

Art: have you ever used the Green Egg series of charcoal grills? I've (or more acurately my stepdad has) had great luck with them as smokers and regular grills.

No, I've never done the Big Green Egg, though it was an option. Super thick so you save a lot of money on fuel (coal) but, the price was such that when I was ready for that level of smoking I wanted a true firepit rather than an upright.

The Big Green Egg is the Holy Grail for apartment dwellers or people with limited space. For me, the WSM is my top upright, and a true Texas pit is my thing for bigger smokes.

I didn't realize it was for small spaces, though in retrospect that makes a lot of sense. Our backyard, if you could even call it that was TINY. The best wings and Thanksgiving turkey that I've ever had did come off those though.

I will be looking into purchasing them given my good experience. Glad to hear that other people like them too. :)

I prefer the New Braunsfel style smokers,But you look to have a fine setup.
I will have to try the cider trick,though I prefer to wrap and bake for 3-4 hours.
Those pics made me so hungry I am ready to fire the pit up right now:notworthy
