Question about Roster cuts

I have heard that the roster cut down to 65 palyers is coming on August 29th, 1) is this accurate and 2) are there any more intermidated dates/numbers the team hits before the final 53 man roster is decided?

Yes, this is correct.

Then, the next Saturday down to 53.

August 29, Tuesday

Roster cutdown to maximum of 65 Active List players by 4:00 pm EDT

September 2, Saturday

Roster cutdown to maximum of 53 players on Active/Inactive List by 4:00 pm EDT. Clubs may dress minimum of 42 and maximum of 45 players and third QB for each regular season and post-season game.

New rules have 75 man cuts to allow teams to sit more of their starters. Schedules I believe are unchanged, but the 65 is now 75.
