    Default Post A Recipe

    Post one recipe (a fairly easy one) that you make that other people seem to LOVE. Might not be your favorite, but other people go crazy for it. Be specific in how you cook it and what you use. Hopefully we can give each other a few good ideas

    Here is mine, which my GF loves more than anything else I make and it is VERY EASY. An easy meal to make for a date night with the lady:

    Warm Goat Cheese Salad

    1) Take an 8 ouch package (or larger) of good goat cheese in a long form. I like to use Chevre Goat Cheese, but others are great too. Don't go super cheap on this as it is the main part of the meal.

    2) Take a peice of non-flavored floss and slice the goat cheese into medallions. I go usually 1/3 of an inch or so. If you try and cut it with a knife, you are going to **** it up. Trust me. Use floss, it works amazingly and cuts it perfectly smooth.

    3) Separate the egg whites from two eggs and beat the whites for a few seconds. Dip the goat cheese medallions into the egg whites and then into into a bowl of plain bread crumbs. Place the breaded medallions on a plate or cutting board and place in the fridge for 10+ minutes.

    4) Take some mixed greens and add craisins, pine nuts, and some pieces of prosciutto. As much or as little as you want.

    5) Heat some olive oil in a pan over medium heat. Wait until it gets hot. Place 2-3 medallions in the pan. More than that, and things will burn. Wait 10-15 seconds and flip with a spoon. Will be a nice light brown. Get them nice and warm, but not burnt.

    6) Place those medallions on top of the salad. Add some raspberry vinaigrette and enjoy.

    As I said, my GF loves this meal so much. It is easy to make and always a crowd favorite.

    Since Turkey day is right around the corner I'll divulge my dressing recipe.

    Bread crumbs
    Granny smith apples
    Celery
    Onion
    sage sausage
    apple juice
    chicken stock
    sage
    poultry seasoning
    salt and pepper
    butter

    Chop celery and onions in small pieces sautee over medium heat in butter

    peel and chop apples, about three or four

    brown sausage in different pan and drain

    once celery and onions are starting to soften add apples and more butter if necessary, we're trying to cause a cardiac arrest.

    once the apples start to soften and cook down a little bit toss with bread crumbs and sausage; season with sage, poultry seasoning, salt and pepper.

    Add about 2 to 1 chicken stock/apple juice to moisten stuffing until it reaches desired moisture, mix again and bake at 350 degrees for at least 30-45 minutes. Check moisture and add more if necessary.

    I always get huge compliments on my dressing and people are always asking for the recipe. I'm not much on writing stuff down as far as seasoning goes so I always do it to taste. Enjoy!

    Also; my wife doesn't really like celery and onions so I chop them really small so when they soften you don't really get a crunch when you bit into them. flavor is there, just not the texture.

    ( I'm not certain I'll have the recipe exact and for that I apologize. I tend to rely on written ones)

    Easy, quick prep one that the kids love
    1 bag mini tater tots
    ground beef and/or ground turkey
    1 can cream of mushroom soup
    cheddar cheese

    place tater tots in a casserole dish
    pour over soup
    cover with browned meat
    sprinkle shredded cheese on top
    cook for 40 min at 400

    delicious and as I said, easy peezy

    Nice recipe BTW.

    One I like to make is a marinated flank steak. I lost the recipe long ago, so I just play it by ear each time I make it.

    Make the marinade with soy sauce, fresh lime juice, fresh peeled and chopped ginger, jalapeno peppers and mint. As I said I can't give you exact amounts, but here are some hints: don't overdo it on the mint or it will taste terrible. Also, as far as the jalapenos go, do it to taste, too few an you won't get the flavor, too many and it will burn your lips. When done right, it is delicious. Marinate for at least one hour before cooking, grilling is preferable.

    My FAVORITE recipe...

    Bacon Wrapped Chicken

    Recipe Ingredients
    6 boneless skinless chicken breast halves
    1 carton (8 ounces) whipped cream cheese with onion and chives
    1 tablespoon butter or margarine, cubed
    Salt to taste
    6 bacon strips

    Directions
    1. Flatten the chicken to 1/2-inch thickness (NOTE to ES posters: just in case you don't understand, it means you'll have to use a culinary hammer to flatten the meat. The chicken breast will almost double in surface area b/c of this, kinda like rolling out pizza dough).

    2. Spread 3 tablespoons cream cheese over each. Dot with the butter and sprinkle with salt; roll up. Wrap each with a bacon strip.

    3. Place, seam side down, in a greased 13-by-9-by-2-inch baking pan. Bake, uncovered, at 400 degrees F for 35-40 minutes or until juices run clear. Broil 6 inches from the heat for 5 minutes or until bacon is crisp.

    Easy Coconut Cakes

    Ingredients needed:

    4 large egg whites
    1 1/2 cups shredded coconut
    2/3 cup sugar
    1/2 cup flour
    1/2 tsp pure vanilla extract
    1/4 tsp salt
    1 stick unsalted butter, melted

    1. Whisk the egg whites until they are smooth and a little foamy, then add the remaining ingredients one by one. Be especially light-handed when you stir in the butter and flour.

    2. Butter two 12-cup mini-muffin pans or fit them with paper liners. Divide the batter among 20 of the cups and bake in a 350ºF oven for 17 to 20 minutes. The coconut cakes should be puffy, springy to the touch, and easy to pull away from the sides of the pans.

    3. Remove the cakes from the pans immediately. If they’re reluctant to come out, rap the pans against the counter. Cool to room temperature before serving with coffee, tea, or even a little jam.

    Makes 20. Per cake: 110 calories, 12g carbs, 1g protein, 10mg cholesterol, and 6g fat.

    Made this one the first time I cooked for my wife when we were dating, and it's still part of our regular rotation. Delicious, easy, and relatively cheap.

    Ingredients: Box of linguine, package of Knorr dry pesto mix, can of quartered artichoke hearts (or whole, and quarter them your self, you lazy bum), green squash, yellow squash

    Cook linguine and pesto as directed on the box. Cut the squash into bite size pieces, mix the veggies together and cook in a pan with a tablespoon of oil and a bunch of garlic, for about 10 minutes. Toss the veggies and pasta with the pesto sauce and serve.

    You can mix it up with whatever other veggies you prefer instead, like mushroom or asparagus, but I suggest keeping the artichoke hearts. They really bring the dish together. Also, if you're not scraping pennies, add chicken.
